I caught up with Susan Green the founder of Proof of the Pudding, the queen of home cooked puddings to find out her secret to the perfect Christmas Pudding!
Susan is a farmer's wife and former solicitor (which she gave up when her first of four boys came along), based just outside of Alnwick in Northumberland was looking for a new job in 1999 due to the decline in farming fortunes culminating in the Foot and Mouth outbreak, when she established Proof of the Pudding.
It all started in the farmhouse kitchen, selling at markets before landing wholesale orders. The Alnwick Rum Christmas pudding is what they are most well known for, using a recipe which has been in her family for generations; but I am lucky enough to have tasted the sticky toffee and chocolate puddings which are to die for!!
Twenty three years on her independent business is still going from strength to strength, with numerous of endorsements for best taste and one main highlight was hosting HRH King Charles III who was a fan of the sticky toffee pudding!
I was privileged to be invited into the kitchen to watch the Alnwick Rum Christmas Puddings being made, the 'pop' and 'glug' of the Alnwick Rum bottle and the smell of the steeped fruits were a strong highlight! Leaving the cherries whole, and using home grown apples were about the only secrets I was let into!
